Easy Pressure Cooker Chicken 




Pressure Cooker Chicken is how it all started...

I was very skeptical to say the least about buying an all in one electric Pressure Cooker.  My husband had a friend tell him about how quick and easy it was to use.  I thought, just another kitchen gadget.  Then my sister was telling about this wonderful chicken and how fast she made it in her Instant Pot.  She said the people she works with love theirs.  I did a little research and then finally made the investment into the 6-quart Instant Pot Lux series pressure cooker. I am still finding new things to try but it is as easy and quick as everyone said and the food is not only delicious but also nutritious.   I just made a pork roast with sauerkraut for New Year's Day it was amazing.  I will get my recipe together for you soon.  For now, here is a simple Pressure Cooker Chicken recipe to get you started with your Instant Pot.





Pressure Cooker Chicken



Place 4 frozen chicken Breast into the pressure cooker.

Sometimes you just forget to take the chicken out of the freezer and put it in the refrigerator.   I have learned over the years how to create many meals in under 30 minutes not from watching the popular TV show but from necessity.  With two active boys and trying to keep up with farm work you learn to make hearty healthy meals fast.  I try to look for chicken that is range fed or at least antibiotic free but there was a time when all I looked at was the price.  You just do the best you can with what you have to work with.




Add 1 cup chicken stock or water. 

I like to use chicken stock to add more flavor but if you don’t have any water will do. 

The last step is to add spices.  I used garlic, paprika and salt.  You can get as creative here as you want.  There are so many spices to choose from and the sky is the limit.  I really like using McCormick Rotisserie chicken blend it takes away all the guess work.  Spices are the key to Pressure Cooker Chicken.




Place the lid on the Pressure Cooker and turn it until it locks.  Check the pressure valve and make sure it is in the sealing position.





Press the manual button and use the – and + buttons to set the timer for 23 minutes then wait for a second.  When the display says “on” the lid is locked and the pot will start counting down. 





When the time is finished the display will start counting back up with an L in front of the time.  The pressure is beginning to release but to do the quick release method turn the pressure valve to venting.  I recommend using a utensil to turn the valve, the steam is very hot. When lifting the lid be careful the final steam will be released.





The Pressure Cooker chicken is so tender you can cut it with a fork.  We made sandwiches but we usually eat it as it is with a side of broccoli and rice.  The broth left from the chicken can be used to cook the rice. Yum

Simple Pressure Cooker Chicken Recipe

A simple chicken recipe that will take frozen chicken from the freezer to your table in 20 minutes. This is a great recipe to get you started with your All in one electric Pressure Cooker and the chicken can be use in so many ways. Use it on a sandwich, wrap, in a salad or as a stand-a-lone entrée. It is delicious.

Prep Time: 5 minutes
Cook time: 20 min
Yield: 4 servings
Tags: Low fat

Ingredients

4 skinless chicken breasts
1 cup chicken broth or water
1 tsp paprika
1 tsp garlic
1/2 tsp salt

Place frozen chicken in pressure cooker.

add water or stock.

sprinkle on spices.

place the lid on the pressure cooker and turn to lock position.

turn pressure dial to seal and set timer using the manual setting for 20 minutes.

When the timer goes off you can move the pressure dial to vent and use quick release method being careful to avoid the steam. When removing the lid also use caution as the last of the steam will release
